Warewash equipment for commercial kitchens

Manual wash versus machine warewash is an operations decision. We spec hood-type dishwashers and glasswashers to covers, rack flow, water quality, and drain — for restaurants and hotels across India.

Manual versus machine wash — qualitative economics

At low covers, a well-set pot-wash and glass sink can suffice. As covers and glassware volume rise, labour, breakage, and inconsistent hygiene push kitchens toward hood-type or undercounter machines. We do not publish price tables; we walk throughput (racks per hour), chemistry, and labour reality in consultation.

Water, softener, and drain

Dishwashers are sensitive to hard water and poor drainage. Many Indian sites need a softener and correct inlet temperature. Tabling left and right of a hood-type machine must fit the room — we plan dirty-in / clean-out flow before ordering.

Bar glass versus full warewash

Bars and cafes often need a dedicated glasswasher with glass-safe cycles; full-service restaurants may need both glass and hood-type capacity. See the leaf guides for each.
